Shredded Carrot Salad

Simple and easy shredded carrot salad recipe topped with homemade buttermilk ranch dressing.

Instructions

  • Shred carrots into thin ribbons using a vegetable peeler or mandolin.
  • Place in a bowl. Toss with the ranch dressing.
  • Serve with cilantro

Notes

Use a vegetable peeler, mandolin, or sharp knife to shred the carrots. Peeler and mandolin are the ways to go, as they cut down time and be more efficient
Choose the freshest carrots you can find for a true carrot taste. 
Do your shredding ahead of time and store in a ziplock back, then just serve with your dressing when you’re ready.
The homemade buttermilk dressing is worth the time. It’s flavorful and a great compliment to the salad.
Feel free to add more ingredients for a more traditional carrot salad recipe. I’m not a raisins in my salad kinda guy, but if that’s your thing go ahead and rock that along with apples.
