Grilled Romaine Lettuce Salad

Ingredients

  • 2 Romaine lettuce hearts halved lengthwise
  • 1 cup Cherry tomatoes halved
  • 1 Cucumber sliced into quarters
  • ¼ cup Citrus Buttermilk Ranch Dressing
  • ¼ cup Blue Cheese
  • ½ tablespoon Salt
  • ½ tablespoon Pepper
  • 1 teaspoon Aleppo optional

Instructions

  • Wash and dry the lettuce. Half each lettuce head lengthwise.
  • Pre-heat grill
  • Season the lettuce generously with olive oil, then add salt and pepper, plus Aleppo pepper if using.
  • Place lettuce on the grill and grill 2-3 minutes per side. Lettuce should be slightly charred and wilted, but maintain its green color and some crunch. Remove from grill.
  • Assemble the salad by serving with tomato halves, cucumbers, and buttermilk dressing. Top with blue cheese crumbles and serve immediately.

Notes

  • Half the romaine hearts for easier grilling of each side
  • Season the hearts well to ensure maximum flavor
  • Grill it short and sweet. You want a few grill marks, some charring, but still mostly green leaves for your end results.
  • The lettuce can be grilled indoors using a cast iron grill pan.
