Start your day off right with our creamy oatmeal with blueberry compote. This oatmeal is made with creamy milk and old-fashioned oats, and is topped with a sweet and slightly tart blueberry compote.
Heat medium sauce pan to medium heat. Add olive oil then toast oats for a minute.
Add almond milk and water and mix well. Cook according to package directions (bring to a boil then simmer for 5 minutes)
Remove oatmeal from heat. Place in two separate bowls. Top each bowl of oatmeal with the berry compote. Serve
Make The Compote
While the oatmeal cooks prepare the berry compote. Pre-heat sauce pan on medium heat. Add the blueberries, cinnamon, balsamic vinegar, and maple syrup. Mix well and cook 5-7 minutes. Set aside.
Remove oatmeal from heat. place in two separate bowls. Top each bowl of oatmeal with the berry compote.

For the oatmeal, you can use any type of milk you have on hand. Soy milk, oat milk, and even cow's milk will work. If you're looking for a non-dairy option, coconut milk is a great choice.
As for the berries, feel free to use whatever type you have on hand. Fresh or frozen berries will both work well in this recipe. And if you don't have blueberries on hand, blackberries or raspberries would also be delicious.
For more intense flavor I like to use cinnamon sticks instead of ground cinnamon.
