This collard green salad has it all - looks and most importantly flavor. This is the perfect specialty salad for your next celebration or family Sunday dinner.
1BunchCollards Greenscut into thin strips and cleaned
1smallCucumbercut into match sticks
½mediumRed Onionthinly sliced
¼cupRoasted Red Pepperschopped
1Applecut into match sticks
½Fennel Bulbsliced thinly
Vinaigrette Ingredients
1tablespoonMaple Syrup
¼cupOlive Oil
¼cupRoasted Red Pepper Brine
1LimeJuiced
1teaspoonMinced Garlic
1teaspoonSalt
1teaspoonBlack Pepper
Instructions
Make the Vinaigrette
Add all the ingredients into a medium mixing bowl. Stir well to combine. Set aside.
Make the Salad
Add all the ingredients into a very large mixing bowl. Mix the ingredients well using your clean hands or with tongs. Add the vinaigrette and toss the salad one more time. Allow the salad to sit for about 10 minutes before serving. This allows the vinaigrette to rid the greens of their bitterness. Taste and adjust seasoning if needed.

The thinner you cut the greens the better and faster they will absorb the vinaigretteDon’t feel constrained by the ingredients. Utilize what you have available in addition to the collard greens. Pears are a good substitute for apples.Make sure you clean the greens thoroughly. It’s particularly important because we aren’t cooking these greens and you’ll want to ensure all the dirt and grit is washed clear.Add other greens like kale or Swiss chard to the salad for more variety.Grilled fish, shrimp, or chicken are good proteins to serve with the salad.
