Prepare the fire by lighting charcoals in your smoker using whatever method you typically use. Allow the coals to cook down to a white ash.
Place the sweet potato directly onto the coals for about an hour. Flip the potato a few times to ensure all sides are cooked.
Remove the smoked sweet potatoes from the grill and allow to cool for 5 minutes or so.
Slice the top of the sweet potato enough to create an opening. Using a fork mash the potato up a bit. Top with the jerk butter and maple. Eat!
Notes
Choose a potato that is more round than long. They take a bit longer to cook, but they’re easier to manipulate and serve without falling apart.Make the jerk butter ahead of time.Go for a 2 for 1, I.e. grill a second ingredient such as chicken or steak while the potato is roasting.This recipe works the same for regular orange sweet potatoes.
