Baked Lamb Meatballs

Absolutely delicious and tender baked lamb meatballs well-seasoned with fresh herbs and spices and served with a pesto sauce.

Ingredients

  • 1 lb ground lamb
  • 1 egg
  • ½ cup bread crumbs
  • ¼ cup fresh parsley finely chopped
  • 1 teaspoon fresh thyme chopped finely
  • ½ teaspoon allspice
  • ½ teaspoon paprika
  • ½ teaspoon black pepper ground
  • 1 teaspoon kosher salt
  • ¼ cup pesto

Instructions

  • Preheat oven to 400 F degrees.
  • Mix all the meatball ingredients together in a large bowl, using your hands or a wooden spoon. Form the meat into small round meatballs.
  • Place them on a wire rack lined cookie sheet.
  • Bake them for about 45 minutes to an hour depending on size of meatballs.
  • Remove from oven and serve with your favorite sauce or the collard greens pesto
