"Full of Smoke" Sotol Margarita On The Rocks

Make this cool and refreshing margarita on the rocks recipe. It’s a unique take on a classic margarita that is great for celebratory occasions and any hot weekend afternoon.

Rather than use tequila, this version use sotol which is a spirit that falls somewhere between tequila and mezcal. The other twist includes cognac as a replacement for your typical triple sec or liqueur (Gran Marnier or Cointreau).

Lime juice and and simple syrup round things out to give this cocktail those margarita flavors.

Sotol is growing in popularity here in Austin showing up in a lot of local cocktail bars.

MOOD MUSIC

Sotol has a definite hint of smoke. Not as strong as mezcal but definitely smoky. It's the smokiness that gives the margarita character.

  • Simple Syrup
  • Ice

How To Make A Sotol Margarita On The Rocks

Margaritas are fun to make, and also super easy. But to make a great margarita requires some technique.

Fill a shaker full of ice. Add sotol, cognac, lime juice, and simple syrup. Shake vigorously for about 10-15 seconds until hands get really cold from the shaker.

Salt the rim of a glass by rubbing the rim with a lime wedge. Invert the glass and rub the rim on a salted plate.

Pour margarita ingredients from the shaker into the glass. Garnish with a lime. Serve

Considerations and Tips

Sotol distribution is growing, but still can be difficult to find in certain markets. Tequila and mezcal are fine substitutes in this recipe.

There are lots good cognacs out there. I used Pierre Ferrand Ambre which I like a lot.

When salting the rim, focus on the outside part of the rim. I prefer to only salt the outside to avoid salt falling into the drink. The salt can throw things out of balance flavor-wise if it’s mixed into the drink.

Enjoy this delicious sotol margarita with brisket barria or Mexican street tacos, peel and eat shrimp, or Jamaican Oxtail seasoned with Tequila Pepper Sauce.
