A simple, but great cauliflower steak recipe in living color in the form of this purple cauliflower! Great for tapas night or as a hearty side.
Thick cut cauliflower slices are seasoned and roasted then topped with a hearty and chunky salsa.
I typically roast whole cauliflower heads, but was going more for an appetizer/tapas play with this recipe.

CAULIFLOWER STEAK INGREDIENTS
For the Cauliflower
- Cauliflower head
- Olive oil
- Lemon juice
For the Salsa
- Cherry tomatoes
- Capers
- Green or Kalamata olives
- Fresh Basil
- Fresh Parsley
- Olive oil
- Red wine vinegar
- Lemon juice
- Salt
- Pepper
COOKING INSTRUCTIONS
Make the cauliflower
Preheat the oven to 400 degrees F. Line a baking sheet with parchment paper. Slice cauliflower into thick slices and then place on prepared baking sheet.
Whisk olive oil, lemon juice, salt, and black pepper in a bowl. Brush ½ of the olive oil mixture over the tops of the cauliflower steaks. Roast cauliflower in the oven for 15 minutes. Gently turn the steaks over and brush with the remaining mixture. Roast until cauliflower is fork tender and golden. This should take about 15-20 minutes.
Make the Salsa
While the cauliflower cooks, mix all the salsa ingredients in a bowl. Let the salsa sit for 15 minutes or more if you have time. Once the cauliflower is done, serve the salsa on top of the steaks.
COOKING CONSIDERATIONS
Cut the cauliflower into slices on the thicker side
Add Spanish chorizo for a meat-based meal
After mixing the salsa ingredients let the salsa sit for a spell to let the flavor gel and balance out.

- Fresh Parsley and Basil
- 2 tablespoon Olive Oil
- 1 tablespoon Red Wine Vinegar
- ½ tablespoon Lemon Juice
- Salt and pepper to taste
Instructions

- Roast cauliflower steaks in the preheated oven for 15 minutes. Gently turn over each steak and brush with remaining olive oil mixture. Continue roasting until tender and golden, 15 to 20 minutes more.
Make the Salsa
- Mix all ingredients in a bowl. Let sit 10-15 minutes to allow flavors to come together.
