"Optimistic" Overnight Oatmeal w/ Fonio Grain

how to make overnight oatmeal

There are no real steps as this is a pretty simple cooking approach. Simply mix all the ingredients  (except the trail mix) well, place in a bowl or glass jar, cover and refrigerate overnight. Overnight oats tips and considerations

  • This recipe was intentionally dairy-free, but you can use your liquid base of choice. Regular dairy milk is perfectly suitable for this recipe, as are other nut-based milks
  • Fonio is an ancient grain that is tasty and adds texture. Similar to quinoa it can also make any dish feel more filling.
  • I chose honey as the sweetener in this recipe as I find it works well with the spices used, however maple syrup and agave or even brown sugar are great substitutes.
  • Choose your preferred trail mix. I went for a mix of nuts, dried fruit, and chocolate

can this oatmeal be heated?

Yes, if you must! Microwave the bowl for about 45 seconds on medium power.

can i substitute coconut milk for almond milk?

Certainly! Any milk option (dairy milk, coconut milk, etc.) all work.

are oats gluten-free?

Not always, partially because in some cases the facilities where they are processed produce other ingredients that aren’t gluten free. It’s always best to check the label.

can you use quick oats?

Quick oats can be used, but I’m not a fan of the texture which is very soft, too soft for me.

can you use steel-cut oats?

Steel-cut oats will work but require a bit more thought. You’ll definitely need to increase amount of liquid. You’ll also possibly need to account for a bit more time as in like 2-3 hours so adjust your cooking start time accordingly.

Ingredients

  • ½ cup Old fashioned Oats
  • ¼ cup fonio
  • 1 cup Almond Milk
  • ½ tablespoon Cinnamon
  • 1 teaspoon Cardamom
  • 1 tablespoon Honey
  • ¼ cup trail mix

Instructions

  • Add oats, fonio, almond milk, cinnamon, cardamom, and honey to a glass bowl or large glass jar. Mix well with a spoon. Cover with lid or plastic saran wrap and refrigerate overnight.
  • Remove from the fridge, add the trail mix. Eat as is or allow to warm to room temperature.

  • This recipe was intentionally dairy-free, but you can use your liquid base of choice. Regular dairy milk is perfectly suitable for this recipe, as are other nut-based milks
  • Fonio is an ancient grain that is highly nutritious. Similar to quinoa it is a good source of protein, so if you wanted added protein to your oatmeal without protein powder, fonio is the way.
