"Don't You Want Me" Simple and Easy Cajun Instant Pot Carrots

Holiday side dish or just simply a quick and easy weeknight side, these instant pot carrots are your ticket!

This is a two ingredient recipe and everything is cooked right in the instant pot making both prep and clean-up a simple act

These carrots are ready in less than 15 minutes, yet the results will make your guests think you put in some serious time and effort.

Carrots are that food you add to other ingredients to make the final dish better. You'd be hard pressed to find many dishes where carrots were the star and the dish was memorable. You offer up carrots and unless its drenched in ranch dressing you gotta beg people, especially kids to eat them. For me this sounds like me impersonating a carrot and singing "Don't You Want Me."

Ingredients Needed For Instant Pot Carrots

  • Carrots
  • Cajun Seasoning 

How To Cook Carrots In An Instant Pot

Peel and cut the carrots on the diagonal so that bigger pieces are about a ¼ inch thick.

Place carrots plus water in the instant pot. Close the lid and pressure cook for 2 minutes. Release the pressure manually by turning the pressure release valve with your hand.

Using gloves or kitchen towels remove the pot and drain the water into your sink.

Place the pot back, turn the instant pot settings to the highest sauté setting. Add butter, ghee, or olive oil plus the cajun seasoning and cook 2-3 minutes stirring a few times.

Remove the carrots and serve topped with fresh parsley.

Instant Pot Carrots Cooking Tips and Considerations

I tend to shy away from most grocery store sold cajun spice mixes. Most of them are extra salty. The ones sold at specialty spice shops are so much better. I usually make my own cause it’s easy and most of the ingredients are typical spice cabinet items. Just mix paprika, cayenne, garlic powder, onion powder, and dried thyme.

Saute time will depend on how thick you cut the carrots. I like mine with a little chew to them, vs. super soft carrots. 

The goal with sautéing is just to add flavor you get from the butter and spices.

I like to serve these immediately so cook them last.

These are great side dish paired with other sides like mashed potatoes or smothered green beans. Serve these with a main dish like meatloaf, piri piri chicken, or blackened pork chops.

Instant Pot Carrots w/ Cajun Glaze

Holiday side dish or just simply a quick and easy weeknight side, these instant pot carrots are your ticket! Quickly cooked and glazed with cajun butter mix.

Equipment

Ingredients

  • 1 lb Carrots peeled and sliced diagonally
  • ½ tablespoon Cajun Seasoning
  • 1 tablespoon ghee

Instructions

  • Add water to the Instant Pot and arrange carrots inside.
  • Close the Instant Pot lid, set the valve on “sealing”, and cook on high pressure for 2 minutes. Perform quick manual release, remove the lid and drain the carrots.
  • Add pot back with the carrots. Turn the instant pot on “saute” settings, add ghee, butter, or oil plus the seasoning and cook 2-3 minutes.
