"sunshine of your love" grilled romaine salad

Enjoy this delicious grilled romaine salad topped with homemade buttermilk ranch dressing. It's the perfect side dish for your next barbecue or quick Summer weeknight dinner dish.

This salad is a simple no-fuss go to on grill days. For my house it's usually a tide me over until the main dish items are ready whether it's smoked whole cauliflower or Texas beef brisket. We all love our main dish but a killer side like grilled romaine provides as much sunshine as Ella Fitzgerald's voice covering a Creams' track.

How to grill Romaine lettuce

There is not much to grilling Romaine. Unless your fire is too hot or you cook too long, it's hard to mess this up. However, Romaine is a delicate leafy vegetable so some care has to be taken.

Step 1: Prepare the lettuce

Half the lettuce hearts lengthwise leaving the base intact so the lettuce doesn't fall apart during grilling

Step 2: Season the lettuce generously

Olive oil, salt and pepper are the core, but if you have Aleppo pepper on hand its a great add.

Step 3: Grill on medium heat 2-3 minutes per side

Step 4: Assemble the salad

The dressing is off da charts flavorful so you don't much else as far as ingredients go. I added fresh cherry tomatoes, but cucumbers would also be a great fit.

Serving Suggestions

This is a perfect pairing with cedar plank fish, grilled steak, or spatchcock chicken. Feel free to round out the menu with another side like potato salad or blackeyed pea salad.

Grilling Tips

  • Half the romaine hearts for easier grilling of each side
  • Season the hearts well to ensure maximum flavor
  • Grill it short and sweet. You want a few grill marks, some charring, but still mostly green leaves for your end results.
  • The lettuce can be grilled indoors using a cast iron grill pan.

Grilled Romaine Lettuce Salad

Ingredients

  • 2 Romaine lettuce hearts halved lengthwise
  • 1 cup Cherry tomatoes halved
  • 1 Cucumber sliced into quarters
  • ¼ cup Citrus Buttermilk Ranch Dressing
  • ¼ cup Blue Cheese
  • ½ tablespoon Salt
  • ½ tablespoon Pepper
  • 1 teaspoon Aleppo optional

Instructions

  • Wash and dry the lettuce. Half each lettuce head lengthwise.
  • Pre-heat grill
  • Season the lettuce generously with olive oil, then add salt and pepper, plus Aleppo pepper if using.
  • Place lettuce on the grill and grill 2-3 minutes per side. Lettuce should be slightly charred and wilted, but maintain its green color and some crunch. Remove from grill.
  • Assemble the salad by serving with tomato halves, cucumbers, and buttermilk dressing. Top with blue cheese crumbles and serve immediately.
