Overnight oats made with coconut milk and cherries for easy, no fuss vegan oatmeal recipe that’s ready to help you get off to a great start to your day.
All my days start with oats in some form, but primarily in a smoothie or with a nice bowl of oatmeal. If I start off right, then I get into a smooth rhythm that carries me for the entire day.

- Old-fashioned oats
- Coconut Milk
- Cherries
- Cinnamon
- Cacao Powder
- Cardamom
- Coconut Flakes
- Honey
How to make overnight oatmeal
There are no real steps as this is a pretty simple cooking approach. Simply mix all the ingredients (except the coconut flakes) well, place in a bowl or glass jar, cover and refrigerate overnight. Serving Suggestion
If using fresh cherries, I reserve some until the end and top the finished oats with them. Top oatmeal with the coconut flakes.
Cooking Tips
- This recipe was intentionally dairy-free, but you can use your liquid base of choice. Regular dairy milk is perfectly suitable for this recipe, as are other nut-based milks
- I chose honey as the sweetener in this recipe as I find it works well with the spices used, however maple syrup and agave or even brown sugar are great substitutes.
- Either frozen or fresh cherries work fine. There is no need to defrost frozen berries ahead of time, as this will occur during the overnight cooking process.

Can this oatmeal be heated?
Yes, if you must! Microwave the bowl for about 45 seconds on medium power.
Can I Substitute Almond Milk for Coconut Milk?
Certainly! I used coconut milk simply because I really wanted that coconut flavor. However almond milk works fine in keeping this a vegan oatmeal option. You can always add more coconut flakes for that coconut flavor.
Are Oats gluten-free?
Not always, partially because in some cases the facilities where they are processed produce other ingredients that aren't gluten free. It's always best to check the label.
Can you use quick oats?
Quick oats can be used, but I'm not a fan of the texture which is very soft, too soft for me.
Can you use steel-cut oats?
Steel-cut oats will work but require a bit more thought. You'll definitely need to increase amount of liquid. You'll also possibly need to account for a bit more time as in like 2-3 hours so adjust your cooking start time accordingly.

- ½ cup Oats old fashioned
- ½ cup Cherries pitted
- 1 cup Coconut Milk
- ½ tablespoon Cinnamon
- 1 teaspoon Cardamom
- 1 teaspoon Cacao Powder
- 1 tablespoon Honey
- ¼ cup coconut flakes
Instructions
- Add oats, coconut milk, cacao, cinnamon, cardamom, honey and half the cherries to a glass bowl or large glass jar. Mix well with a spoon. Cover with lid or plastic saran wrap and refrigerate overnight.
- Remove from the fridge, add reserved cherries and top with coconut flakes. Eat as is or allow to warm to room temperature.
