Ingredients Needed To Make This Cherry Tomatoes Salad
For the Salad:
- Cherry tomatoes
- Peaches
- Avocado
- Shishito Peppers
- Chimichurri sauce - Any preferred green salsa or pesto will do.
For The Whipped Feta
- Feta cheese
- Greek Yogurt
- Garlic cloves
- Lemon juice
- Olive Oil
How To Make A Cherry Tomatoes Salad (Step by Step)
This Cherry tomato salad recipe comes together rather easily. It's merely an assembly job for the most part, but you will have to mix the whipped feta spread.
Step 1 Chop the Vegetables
Halve the cherry tomatoes and set aside. Slice the peach in half. Remove the pit then slice each half into quarter slices.
For the avocado cut it in half. Remove the pit then scoop out the flesh with a spoon. Cut each half into quarters then dice them into chunks.
Cut the peppers into thin round slices.
Set all the vegetables aside in a large mixing bowl.
Step 2 Make the Whipped Feta
Add the feta cheese and greek yogurt to high-sided bowl or large jar with a wide top. Add in the lemon juice plus the minced garlic.
Using an immersion blender puree to a thick creamy consistency. Add olive oil and blend just a bit more. Alternatively, you can also use a food processor. Add a pinch of salt and pepper for additional seasoning.
Step 3 Assemble the Salad
Spread the whipped feta in the bottom of a bowl. Layer the cherry tomato salad onto of the spread. Top the salad with the chimichurri sauce.
