"The Finest" Brisket Stuffed Avocado {Recipe}

Brisket stuffed avocado make for an excellent use for leftover smoked brisket. This recipe is an easy one for your list of keto avocado recipes.

When I make smoked brisket, or even buy for that matter, I typically have more than enough on hand for leftovers. Stuffing an avocado is one of the more easy and tasty ways to make use of the extra brisket.

STUFFED AVOCADO INGREDIENTS

INSTRUCTIONS FOR STUFFED AVOCADOS

Chopped brisket to almost minced levels.

Halve the avocados and remove the seed.

Chop or slice the peppers depending on your preference. Mix the minced brisket with the peppers and stuff the avocados.

Serve with pickled red onions and cotija cheese.

CONSIDERATIONS AND TIPS

I prefer to leave the avocado inside their skin. This helps retain their shape as well as slow the browning that occurs

Other leftover proteins (chicken or shrimp) work as substitutes to brisket.

Other vegetable options include black beans, corn, or cherry tomatoes.

Pickled onions and cotija are my only condiments, but if you're a sauce person feel free to add your favorite BBQ sauce.

Use padron or shishito peppers as a replacement for jalapenos to avoid any spicy heat
